Are you looking for a high-protein, vegan breakfast option that will fill you up and fuel your workouts? These Vegan Protein Baked Oatmeal Muffins are delicious and filling, and will fuel your workouts! They’re easy to make with relatively few pantry staple ingredients. They taste like banana bread, and you can use whatever additions you want to make it your own!
Recipe: Protein Baked Oatmeal Muffins – Banana Walnut Flavor!
(Makes 12 Muffins – we usually have 4 each so 3 servings)
Ingredients:

- 1.5 cup Quick Oats
- 4 scoops Vegan Protein (I use Steel Vanilla Cream Pie)
- 1 tbsp Flax Seeds
- 2 tbsp Water
- 2 Ripe Bananas
- 1 tsp Baking Powder
- 1 tbsp Cinnamon
- 1 cup Almond Milk – use more if your batter is too dry
- 1/2 cup Unsweetened Apple Sauce
- 1 tbsp Truvia Brown Sugar (optional if you don’t have, the bananas and protein powder add a good amount of sweetness already)
- Optional: 1 cup walnuts, or any kind of nut you prefer, or even some chocolate chips!
Directions:
- Preheat oven to 350 degrees
- Create flax egg by adding flax seed to water, let sit for 5 minutes
- Grind oats until flour like consistency (I use a Vita Mixer for this)
- In a large bowl, mash bananas
- Add all ground oats, protein powder, baking powder, cinnamon, applesauce, flax egg, Truvia, and mix
- Add almond milk little by little and mix – batter should have a paste like consistency. Make sure it’s not too watery or it will not bake well.

- Fold in walnuts (or other mix ins as desired)
- Spray muffin pan with non stick cooking spray
- Scoop batter in to muffin pan
- Bake at 350 degrees for 30 minutes
- Let cool for 15 minutes
