Tofu Scramble – That isn’t boring

Ingredients:

◦ 1 block of firm or extra firm tofu

◦ 2 small sweet potatoes peeled and chopped into 1” cubes

◦ 1 can of black beans

◦ 1.5 cups spinach

◦ 1 tsp turmeric

◦ 1/2 tsp black pepper

◦ 1.5 tsp Indian Kala Namak Black Salt

◦ 1/4 cup Nutritional Yeast

◦ 1 tsp Garlic powder

◦ 2 tbsp plant based butter

Directions:

1. Heat the plant based butter on a skillet over medium high heat while prepping the sweet potatoes. Once butter is melted, add sweet potato to the skillet and cover. Stir occasionally until fork-tender(approximately 8 minutes).

2. Drain and rinse the canned black beans and then add to skillet.

3. Stir and then set aside sweet potatoes and black beans.

4. Add butter if needed to skillet before adding crumbled tofu.

5. Add seasonings to the tofu(turmeric, black pepper, nutritional yeast, garlic powder & Indian Kala Namak Black Salt. Mix well.

6. Add fresh spinach and stir for 2-3 minutes.

7. Combine all ingredients and serve! You can also modify this recipe in a burrito if you’d like! It’s plant based, protein packed, and absolutely delicious. Enjoy!
