Healthy Baked Chicken Parmesan

Healthy Baked Chicken Parmesan

Yields: 6 servings   Total Time: 55 minutes

Ingredients:

2 pounds chicken cutlets

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

3/4 cup Tomato

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon olive oil

1/2 cup wholegrain breadcrumbs unseasoned

3/4 cup mozzarella cheese (part skim)

2 tablespoons Parmesan cheese grated

 

Directions:

Preheat oven to 375 degrees.

Tenderize cutlets or slice in half depending on size.

Brush olive oil onto baking sheets.

Mix up the spices with breadcrumbs, and add a little parmesan cheese.  Coat chicken on both sides.

Put coated chicken on baking sheet and cook for 15 minutes.  Then flip over and bake for another 15 minutes.

Take the pan out of the oven and spread 2 tablespoons of sauce on each cutlet.  Then sprinkle mozzarella cheese on top of cutlets.

Stick the cutlets back into the oven for an additional 10-15 minutes.
