Ingredients:
3 small or 2 large sweet potatoes peeled and diced
1 pound ground turkey 85% lean
Peppers & Onions(optional 1 cup each)
2 cups of corn
2 zucchini
2 tablespoons olive oil
1/4 cup cilantro
1.5 tablespoons ground cumin
2 tablespoons minced garlic
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
In a large cast iron skillet, heat olive oil over medium or high heat. Add garlic and cook for a minute before adding ground turkey. Use a wooden spoon to break apart meat and cook for about 8 minutes until meat is browned. Add spices and stir well.
Peppers and onions are optional, and I’ve found that you can switch up the vegetables with corn and zucchini to keep this recipe interesting, yet tailored to your taste pallet. Add all the vegetables you desire in along with the sweet potatoes and 1/2 cup of water, stir and cover with a lid for 6-8 minutes or until the sweet potatoes soften.
Remove skillet from heat, and take off the lid. Add salt and pepper if you desire more, and top with cilantro before serving. Enjoy!
